Beet it Buster !

I just love golden beets - and I just picked the last one of the season this week. I grew them from seed and each one was a star. To roast them, I trim and wrap each beet in foil, and bake them in a 350 degree oven for about 35-45 minutes depending on the size of the beet. It was really easy --from growing to roasting - and boy were my friends and neighbors impressed. One note, my golden beets did MUCH better than my red beets. No matter. I will be growing only beets next year. Well, maybe a tomato plant here or there. And the edemame was fun for the kids.... and my gourds are drying nicely for bird houses....
P.S. Today - Suzi hosted an early Yankee Christmas at the office with new jewelry from Monet. We each received a number and selected our items until all the loot was claimed. It was just fantastic!
